Blueberry and White Chocolate Mini Cupcakes

Ingredients

Cupcakes:

  • 2 3/4 cups water
  • 1/4 cup organic applesauce
  • 1/4 vanilla
  • 1 organic egg, beaten
  • 4 tablespoons organic honey
  • 4 cups organic whole wheat or unbleached flour
  • 1 tablespoon baking powder
  • Frozen or fresh organic blueberries

Icing:

  • 1 bag organic, unsweetened, white chocolate chips
  • 1 tablespoon olive oil

Directions

Preheat oven to 350°.

Cupcakes: In a large mixing bowl, mix water, applesauce, vanilla, egg, and honey. Slowly add flour and baking powder. Last, add blueberries.

Place mini muffin papers into mini muffin baking tin and spray with nonstick spray.

Spoon batter into papers, filling almost to the top.

Bake for 45 minutes. Check with toothpick to be sure they are cooked through.

Remove from tin and let cool completely.

Icing: Start with 1/2 cup chips and 1 tablespoon oil and melt for 10-second intervals, stirring mixture until smooth. Dip cupcake tops into icing and top with a blueberry. Refrigerate.

Pizza with Carrots

Ingredients

Crust:

  • 3 cups organic whole wheat flour
  • 1 cup organic uncooked oats
  • 2 tablespoons organic margarine or shortening
  • 1 organic egg, beaten
  • 1 cup water
  • 1/2 cup organic pizza/pasta sauce

Topping:

  • Olive oil
  • Garlic powder
  • 1/3 cup organic pizza sauce
  • 1 cup organic Parmesan
  • 1 large carrot, shredded

Directions

Preheat oven to 375°.

In a large mixing bowl combine flour, oats, and margarine. Add beaten egg and water, and 1/2 cup pizza sauce. Mix thoroughly, and then knead. Cover and refrigerate for 1 hour.

Divide into desired-size balls and, on a floured surface, roll out into circles. Make edge thicker for crust. Place on a greased baking sheet. Brush with olive oil, then sprinkle garlic powder over surface. Coat with remaining pizza sauce and sprinkle Parmesan and carrot on top.

Bake for 10-12 minutes. Let cool, cut with pizza cutter, and serve. Must be stored in refrigerator.

Peanut Butter Dog Bone Dipped in Melted Carob

Ingredients

Bone:

  • 2 cups organic whole wheat flour
  • 1 teaspoon baking powder
  • 1 cup organic smooth peanut butter
  • 1 cup organic skim milk
  • 1 tablespoon honey

Dip:

  • 1 bag carob chips
  • Olive oil

Directions

Preheat oven to 375°.

Bone: In a large bowl, combine flour and baking powder. In another bowl, mix peanut butter, milk, and honey, and then add to dry ingredients. Knead on a floured surface; roll out to 1/4-inch thickness and, using a bone-shaped cookie cutter, or one of your choice, cut out cookies. Place on a greased cookie sheet and bake for 20 minutes.

Remove from sheet and let cool completely.

Dip: Pour 1/2 cup of carob chips and 1 tablespoon oil; melt for 10-second intervals, stirring until smooth. Dip bones. Place on wax paper and let set. Refrigerate and keep stored in refrigerator for best results.

Elvis Bone Dog Sandwich

Ingredients

Bone:

  • 2 cups organic whole wheat flour
  • 1 teaspoon baking powder
  • 1 cup organic smooth peanut butter
  • 1 cup organic skim milk
  • 1 tablespoon honey

Filling:

  • Organic turkey bacon
  • 1 cup organic banana chips
  • More organic peanut butter

Directions

Preheat oven to 375°.

Filling: Cook bacon until crispy. Crush bacon and banana chips and mix together. Spread peanut butter on flat side of each cookie, and then sprinkle the bacon and banana bits onto peanut butter coating. Press 2 cookies together to make a sandwich. Keep refrigerated for best results.

Healthy Breath Bites

Ingredients

  • 1 tablespoon olive oil
  • 1 cup brewed mint tea cooled to room temp
  • 1/2 cup mint leaves
  • 1/2 cup parsley
  • Pinch of cilantro
  • 2 1/2 cups organic whole wheat flour
  • 1/4 cup uncooked oats
  • 1/4 ground flaxseed
  • 1/4 cup honey

Directions

Preheat oven to 350°.

In a blender or food processor, mix olive oil, tea, mint, parsley, and cilantro. Blend well. The mixture should be very green.

In a large bowl put flour, oats, flaxseed, and honey. Mix. Add wet ingredients to dry and mix well.

On a floured surface, roll dough out to 1/4-inch thickness and cut into desired shapes. Place on greased cookie sheet and bake for 15-20 minutes.

Cool and serve. Store in a cool, dry place.

Ingredients

  • 1/2 cup molasses
  • 2 tablespoons honey
  • 1 1/4 cups water
  • 1/4 cup olive oil
  • 3 cups organic whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ground cloves
  • 1 tablespoon finely chopped fresh ginger

Directions

Preheat oven to 350°.

In a large bowl, combine molasses, honey, water, and olive oil. In another bowl, combine flour, baking soda, cinnamon, cloves, and ginger. Mix dry ingredients into wet. Divide dough into 2 balls, wrap, and refrigerate for 3-5 hours.

Roll out chilled dough to 1/4-inch thickness and cut into desired shapes.

Bake for 10-15 minutes.

Let cool completely and decorate with melted yogurt chips or carob, if desired.
