So I really riffed on this. I first browned chicken-garlic sausage, then removed it and melted the butter. I sautéed onion and fennel, then added half a cabbage, chopped. Sprinkled a bit of celery salt on and lots of ground pepper. Added in sliced apples (didn’t peel them) and let it cook down. Added a big dollop of spicy mustard, a generous squirt of maple syrup, and a bit of apple cider vinegar. Then added back in the cooked sausage. It was amazing! Thanks for the base recipe!

i sliced the cabbage as for coleslaw (e.g. food proc 2mm blade) ditto the onion. Started the onion with 2 tbs olive oil, added the cabbage once the onion softened and began to brown, tossed every few minutes with 1 tsp caraway, 1 tsp celery seed, 1/2 tsp brown mustard seeds. (had I thought, I would have added the spices with the onion alone). On e cabbage was also softened, added very thinly sliced apple and kept tossing until both cabbage and apple brown. 1 tbs cider vinegar, 1 tsp salt at end.

Cooked the onions in unsalted butter and chopped bacon, added apples for a few minutes, then cabbage, soy auce, brown sugar and leftover white wine, simmerred for about 10 minutes. A nice mix of savory, sweet and sour, nice with pork or chicken

Delicious! I wish I had used half the butter. Next time I’ll start with 2T and adjust if necessary.

We also cook cabbage with onion & green apple, a similar recipe from my Latvian MIL. My partner doesn't care for caraway, so I tried the mustard idea from another comment. Other changes I made were toasting seeds (celery, brown mustard and coriander) then crush & set aside. No blanching, cabbage was fresh from our garden. Added the seeds & salt when called for, stirred in mustard and fresh sweet green apple from our orchard (sooner and ours get too soft). Tender & Delish!

Made this for Thanksgiving dinner. Used two onions and it worked fine. Since it was just the two of us, we had plenty left over. My wife added leftover turkey, cooked it in chicken broth and added some seasonings for a very nice stew!

Being both lazy and a lover of fiber, I cut up the apple without peeling. I also shredded the cabbage finely with a mandolin and ate it all as a light lunch. Nice combination of flavors.
